Hospitality chain planning to invest $10 million in five new venues in Queensland

HOSPITALITY chain The Sporting Globe is preparing to invest $10 million into five new venues in Queensland.

The sports bar and grill opened its first Queensland operation at Westfield Chermside last month, and owner James Sinclair said the business had enjoyed a strong start.

“We knew the Queensland customer had a keen liking and following of sport, and not just Australian sport but American sport, too,” he said.

“On our third day we had the Super Bowl, and with very little publicity we were fully booked out with over 400 people at 9am on a Monday.’’

Mr Sinclair said the company had joined with a Queensland franchisee to operate the Chermside business, and that he was impressed with the location.

“With more retail moving online, we’re finding that shopping centres have realised good food and entertainment options are the key drivers,” Mr Sinclair said.

“We’ve spent over $2 million on the Chermside site, and we’re really keen to secure sites in South Brisbane and on the Gold Coast.”

The Chermside business employs 40 people, with The Sporting Globe hoping to have five establishments in Queensland in two to three years.

Mr Sinclair said the concept filled a gap in the marketplace.

While working and travelling in the US he said he noticed sports bars were more engaging, with a relaxed and family-friendly atmosphere.

“They have some enormous sports bar chains which are tremendously successful, some with over 1000 venues,” he said

“Typically here, we have more of a pub culture and there was this perception that a sports bar was a corner of a large licensed venue that focused on horse racing.

“The Sporting Globe is an all inclusive, female-friendly and family-friendly venue with a social atmosphere.’’ where you can come and have a meal and enjoy the excitement of a game,” he said.

The Sporting Globe Plenty Valley opened to the public on Thursday the 22nd of March as part of Westfield’s 80-million-dollar development of its new al fresco leisure and dining precinct. The Sporting Globe Bar & Grill has just opened its fifth venue and second franchise at Watergardens Shopping Centre, Taylors Lakes. The business has ambitious growth plans in 2015, including its first venues outside of Victoria. 

Brad Dekkers was recently appointed as franchise development manager to the business. He was previously in franchising consulting at PricewaterhouseCoopers.

Sports bar chain The Sporting Globe will break ground on its sixth Victorian store next month and will take its growing business interstate for the first time later this year when it opens an outlet in Western Australia.

The chain, which was founded in the regional Victorian city of Geelong by James Sinclair and Brad Harris in 2010, has grown in leaps and bounds in the last 12 months, opening two new venues and now turning over between $15-20 million annually.

So what’s the key to The Sporting Globe’s growth? According to Sinclair, a decision to franchise the chain has paid off.

The first Sporting Globe franchise was opened in the Melbourne suburb of Richmond last year, joining company-owned venues in Geelong, Moonee Ponds and Fountain Gate.

A franchise at Watergardens in Melbourne’s north opened in October 2014 and discussions are underway with potential franchisees for a new venue in Werribee, construction on which will commence in February. The venue is expected to open by May.

The Sporting Globe is looking for a franchisee to take over the Fountain Gate store and will also look to franchise the Geelong store once renovations are completed in March.

And later this year, the first interstate Sporting Globe franchise will open in Rockingham in Western Australia.

Sinclair says the decision to franchise the Sporting Globe was based on securing the company’s key asset: its people.

“Our business is all about people,” says Sinclair, who says each venue employs between 30 and 50 people.

“We found we had quite a lot of staff involved in managing our venues and the key thing to going well was to get the right people involved, motivated and doing a good job.”

Sinclair believes attracting high quality franchisees is about building a supportive business model.

“Our whole model is based on supporting franchisees to focus on exceptional customer service and to stay in touch with their customers,” he says.

“For each new store, we find the site, procure the deals, work with contractors to fit out and build the store, and conduct training with franchisees and staff. Once the venue is up and operational, we continue that support, with operational support each month, audits and ongoing training.”

The Sporting Globe head office also handles franchisees’ accounting and bookkeeping, a function that Sinclair says he took from the business model of convenience chain 7-11.

“On top of our franchisees’ immediate KPI reporting, we also do their monthly accounts and profit and loss,” he says.

“We also have a joint bank account with franchisees and we process their payments once a week. It means they are paid reliably and don’t have the headache of doing their own bookkeeping. All they have to do is approve their bills.”

The system means The Sporting Globe is always aware of the financial position of its franchisees and at the same time, the franchisees “always know where they stand”, Sinclair says.

“We know we’re they’re at and we can see first-hand and fast if things are going downhill.”

While multiple Australian franchises have recently come under attack for their treatment of franchisees, Sinclair says the key to making it work is transparency between franchisor and franchisee.

“Everyone wants to make the business successful and the more systems you have in place, the better it is for everyone,” he says.

However, Sinclair admits switching over from a network of only company-owned stores to a franchise network is not without its challenges.

“Training is the biggest challenge,” he says.

“When you’ve got a company-owned model, typically employees have come through the system, starting as supervisors and then managers, then venue managers. They are well-trained and au fait with the culture and how the system works.”

“But franchisees come from all sorts of backgrounds and you have to get them up to speed with the processes and culture. It means spending a lot of time with them early on.”

A growing staff at the Sporting Globe head office has helped with this, with the company making new hires in marketing, accounts and communication and events over the past 12 months, as well as bringing Brad Dekkers on board as franchise development manager.

“Brad came out of franchising at PwC and his hire was an important step for us,” Sinclair says.  “He is responsible for helping to educate people who may be interested in the brand as well as recruiting franchisees who are the right fit.”

Looking ahead, Sinclair says he can see a day when there are Sporting Globes venues in more Australian states and territories, but for the time being is focused on making the expansion to WA work.

“We are working on really establishing WA properly and there is quite a lot of support involved in being a franchisor,” he says.

“It’s important to build a strong support network to make sure [the venues] work in that state first before branching out to other states.”

But when the time comes to open more venues, Sinclair and his team will be on the lookout for high traffic, highly populated areas that are home to people who enjoying eating, drinking and watching sport and franchisees who want to be part of the Sporting Globe brand.

“I think we’re lucky because we’re in a very attractive industry,” he says.

“A lot of people like the idea of owning their own business and who hasn’t sat around in a beer, having a beer with their mates, and thought, wouldn’t it be great to open a sports bar?”

Brad Harris and James Sinclair founded The Sporting Globe brand in 2009, and they’re about to open their first franchise – which comes as no surprise considering their backgrounds.

Sinclair’s father is the CEO of San Churro, meanwhile Harris’s father Geoff was one of the founders of Flight Centre and a major investor in Boost Juice.

“The Sporting Globe model was always created with the idea of franchising in mind – in the US many of the successful sports bar models have often been franchised and some of them have several hundred locations over there, so the business was designed with distinct branding, product specialisation and operating systems to allow it to eventually become a successful franchise,” Sinclair explains.

THE BRAND

He describes The Sporting Globe as “a hospitality and sports entertainment brand inspired by America’s popular sports bar concept,” and the pair currently has three company owned venues in operation across Victoria – Geelong, Fountain Gate and Moonee Ponds.

Each offers a pub-style food and drink menu as well as extensive sports coverage. “We provide a high quality casual food environment, a large range of beers on tap and a welcoming atmosphere.

“All of our venues are fit out with state-of-the-art audio visual equipment, so they’ve usually got a huge hero screen as well as multiple LED panels and displays so that if there’s a game on you can catch it from every angle – it just creates a really good, exciting environment for not only major sports but everything in between.”

Sinclair explains the concept is unlike the stereotypical Australian pub where males sit together and bet on the horse races, for example.

“It’s a family friendly dining environment and women attend our venues – The Sporting Globe is far more a social hangout than necessarily a dedicated sports bar.

“Sport is something that I think crosses all demographics – everyone’s got an interest in some sort of sport so it’s a really good talking point,” he explains.

THE FIRST FRANCHISE

Sinclair and Harris will open their first franchise in the Melbourne suburb of Richmond by mid-May and it’ll be headed up by retired Richmond fullback Kelvin Moore and his business partner Sean Kagan.

“Kelvin retired two years ago yet he’s still got a passion for sport and he’s a really good people person. He was in the club’s leadership group too, so is really confident in leading and working with a young team of people, which works well considering he and Sean will have around 55 staff aged around 18 to 20-something –it’s a similar age bracket to a football club in that respect.

“Sean has worked in cafes and pubs so he has more of a hospitality background,” adds Sinclair.

The Richmond site is set to be the company’s largest yet, and it’s licensed to hold 625 people. “It’s got a rooftop deck, large function room, a restaurant that caters for about 140 people plus another large sports bar that’s complete with about 65 screens,” he says.

THE IDEAL FRANCHISEE

While it’s considered a bonus, Sinclair and Harris value personality traits above prior experience.

“We’re looking for people that are honest, good with people and able to manage and lead a team. It’s really important that they have the skills to be able to motivate, coach, manage and develop a large number of people – that’s probably the most important thing we are looking for,” he explains.

“We can teach people how to make different bar items or elements of the kitchen and how to run the business – it’s the people management skills that are a huge benefit.”

Sinclair acknowledges the sheer size of the brand’s franchises may influence who invests. “It’s a more expensive set-up, fit-out and business overall than franchises such as Boost Juice and San Churro, so I think we could foresee our future franchisees in some circumstances being a partnership of two people rather than just one individual.”

TRAINING

When franchisees enter the system they’ll first take part in staff induction training and then they’ll undergo the management training process.

“It involves training across what are the key management KPIs including cost and revenue centres, marketing, managing people, operational support on the night – which covers what the managers should be doing to support their staff, and learning how to train staff in different systems.”

Ongoing support is extensive, and includes:

Ongoing venue audits to make sure franchisees are following systems and procedures.
Marketing support, which includes the management of social media, upcoming promotions, EDMs and the company’s club loyalty program.
Menu design and development.
Management accounting and reporting.
Payroll execution.
Supplier procurement.
Fit-out design and development assistance.
“I guess the goal was to offer people who aspire to own the own business a competitive advantage over independent operators because they are able to focus on the one thing that matters the most, which is looking after the customer and of course their staff,” Sinclair explains.

EXPANSION

Sinclair and Harris hope to eventually open sites across the country; however Victoria is currently the key focus.

“We’d like to open another two sites in Victoria within the next 12 months and our goal for 2015 is to find a site and hopefully a good franchisee interstate.

“Certainly we would love to be in all of the states around Australia and we’re keen to embark on that journey next year,” he adds.

COST

The cost of a franchise will vary according to the size of the site – the brand’s Fountain Gate store is around 400sqm meanwhile its Geelong venue is over 1000sqm.

“Typically initial investment can start at around $750,000 and can go up to $1.5 to $2M plus for a really big venue,” Sinclair says.

James Sinclair has entrepreneurialism in his veins. The son of the co-founder of Horseland, he grew up experiencing the highs and lows of business. So it was no surprise when he and lifelong friend Brad Harris decided to go into business together.

Having lived in New Jersey in the United States for a period of time, Sinclair experienced the concept of the sports bar. Returning to Australia he struggled to find an equivalent, generally being left with either the local pub or a nightclub.

Sinclair realised there was a chance to bring the concept to Melbourne, establishing a family and adult-friendly location where people can go to enjoy a drink, watch some sport and socialise, while bringing along the kids if need be.

Sinclair and Harris decided to start their own “community social hangout” with The Sporting Globe, and launched their first sports bar in Geelong in 2010. The pair first bought an old hotel known as The Preston Hotel which had gone “belly up”, but had a newly renovated kitchen. The facilities allowed the founders to set up the bar without some of the initial costs.

“We thought Geelong was a city with a keen sporting ethos and a high community involvement in local sport, making it a good market to test the concept,” Sinclair says. “As it was regional it also meant we could more affordably market the business and we took out local radio and newspaper ads.”

Sinclair now hopes The Sporting Globe will become Australia’s “most loved sports bar and grill”. The business is on its way, with three locations already open and a multimillion dollar turnover.

Mornings
In 2010 Sinclair and Harris relocated from Melbourne to Geelong to get the business off the ground, but now it’s expanding, they’ve set up a support office based in Port Melbourne.

On Monday and Friday, Sinclair will come into the Port Melbourne office, plan the week, examine the roster and ensure the week is scheduled in terms of supplier meetings, staff meetings and time to work on the business.

“For me, I’m now working on developing the bar into a franchise and finding new locations.”

Daily life
With three sites now operational, Sinclair divides his week between the Port Melbourne office and the Geelong, Moonee Ponds and Fountain Gate sports bars.

On Tuesdays, Wednesdays and Thursdays, Sinclair holds a management meeting at each of the venues. And in the afternoons he looks at new site locations and meets with suppliers.

Since launching in 2010, Sinclair says both himself and Harris are able to work on the business, more than in it.

“At the start we were actually out there every day serving people lunch and dinner,” he says.

“Now, Brad is the operations director and he oversees business performance including monitors compliance to standards and systems, staff training, stock management and operational health and safety, while I oversee franchise growth, property development, marketing and finance.”

When Sinclair and Harris first took over the hotel in Geelong, the pair’s initial challenge was to change the staff culture and develop service and operational systems and marketing platforms.

“We took a business which was losing money and knew the goal was to develop a successful system,” he says.

“Chain restaurants aren’t generally as present in Australia, but I still think there is a role for those chain businesses like TGI Friday’s and Hog’s Breath, which offer identifiable branding and consistency in food, environment and entertainment.”

Sinclair considers a number of factors when choosing a new venue location, including the foot traffic in the area, key traffic generators and what the demographic of the area is.

From the outset The Sporting Globe has had a distinct branding strategy and carefully designed operating system which allows it to be a franchise.

“We also implemented a loyalty program which we’ve seen be successful with the Horseland and Boost Juice franchises,” Sinclair says.

“The loyalty program has been a key pillar of our marketing strategy…  as has social media. Social media is less expensive than print or radio ads.”

Despite claims by many businesses that operating a small business is made burdensome by compliance regulations, Sinclair has found it “pretty simple”.

“We have a clock in and clock out system, all the rates are loaded and one of the benefits of being in a franchise model is that one of the services we offer is to do the payroll. The managers have to approve the staff's hours, and then we process it from there,” he says.

“Responsible Service of Alcohol is very important too, and that’s been a matter of staff training. We have quite a detailed training manual and staff induction process to ensure all staff have a good working knowledge of alcohol laws.”

One lesson Sinclair has learnt in the past few years is to be flexible with plans.

“Everything we want tends to take longer than we’ve expected. With a new site opening we now know to allow for a bit of extra time,” he says.

“We no longer set open dates until we’re a lot closer to the day. That way if you get delayed by a few weeks you won’t have to panic. We like to run trial shifts with everyone in the venue before the actual opening, but with the one in Fountain Gate the painters were still doing touch ups while I was putting on my tie to open the venue.”

Leisure time
Unsurprisingly, sport is one of Sinclair’s passions and ashamedly admits he follows the Melbourne Demons AFL team.

“I don’t play anymore, but I enjoyed it as a junior. I’m keen on golf and snow sports, horse riding – basically any type of sport.

“I love major sporting events, I’ve been to the last two Super Bowls in the US and I’m excited about the soccer World Cup coming up.”

Future
Currently Sinclair is working on opening three new sites, with a site in Richmond opening in less than a month’s time.

Former AFL footballer Kelvin Moore will come on board as one of the franchise partners to run the new store.

“He’s a switched on guy with a great personality and he will be a good business manager,” Sinclair says.

“He’s come from a football background, so he’s good at sticking to a system and he knows how to lead a team of people, just like in a business. He’ll be good with the staff demographic of 18-25 year olds.

“Our plan from here is to grow quite quickly, but with the right franchisees.”

To other entrepreneurs, Sinclair says it’s important to be aware that a brand can never be all things to everyone.

“You need to stay true to the business plan and focus on what you want. A lot of people questioned in our initial stages if our model could work, but we stayed true to the narrative and that’s served us well in today’s environment.”

Sports bar founders have business in the blood

Two young entrepreneurs with a retailing pedigree are behind a fledgling but fast-growing chain of sports bars modelled on the popular concept in the United States.

Brad Harris, 29, and James Sinclair, 28, are co-founders of The Sporting Globe bar and grill chain, which in March will open its fourth outlet in Victoria.

Harris is the son of BRW Rich List member Geoff Harris, a Flight Centre co-founder and initial investor in Boost Juice, while Sinclair’s father, Geoff, was co-founder of equestrian retail chain Horseland and is now chief executive of franchisor San Churro.

After nine months’ research of sports bars on the east coast of the US in 2009, Harris and Sinclair pooled their savings and opened their first outlet in Geelong in early 2010, taking over the existing freehold of a pub in the city’s centre.

The move came after several months of trying to find sites in Melbourne, and only came about when the pair happened to be driving past the Geelong pub and asked the landlord for a tour of the site.

“We had some luck in that the previous operator spent about $2.7 million fitting out the site before we bought it," Sinclair says. “So we had everything there that was basically brand new, and just had to apply our style and systems to it."

The venture was cash-flow positive and profitable within six months, and the pair subsequently opened another two outlets in Melbourne in the following two years, one in a shopping mall and another in a suburban retail strip. Their next outlet will be in inner-city Richmond. Establishment costs run between $800,000 to $1.5 million.

The pair’s blueprint includes a roomful of large LED television screens showing different sports, a dedicated dining area aimed at families, a central bar and an area that includes subtly placed TAB betting terminals.

Sinclair says the chain attracts its largest patronage for four events: the Melbourne Cup in November, the AFL Grand Final in September, New Year’s Eve and the Super Bowl, which takes place on Monday morning.

Sinclair says the pair have applied what they learnt from their fathers. “Weekends when I was a teenager would be Dad going over the stock, so stock management is very important to us. How long to hold on to stock, the cost of sales and managing rosters. [Wages] are one of your biggest costs so you have to able to be nimble in managing roster costs."

Harris adds: “Geoff is constantly going on about goal-setting. Not just for us, but for the staff as well. So every staff member has a set of goals. It’s about empowering and motivating them using those goals, which makes them more productive."

The pair’s plans involve establishing a franchising operation for expansion of the brand interstate. Harris says the concept could also work in other high customer-traffic areas such as airports.

The franchise operates in the casual dining arena with a state-of-the-art sports fit out. The Rockingham site accommodates more than 150 diners and has more than 50 high definition TV screens.

Locals Phil and Tim Deavin are the father and son franchisee team. Tim is a member of the Australian men’s hockey team with his eyes set on the upcoming 2016 Rio Olympic Games (he’s already a World Cup and Champions Trophy gold medal winner, and the recipient of an Olympic Bronze from the London event).

The founder of The Sporting Globe Bar& Grill wanted to allow Australians to experience a US-style sports bar.
Do you love sports, cold beer and hot wings? Then you may have found your calling at The Sporting Globe Bar & Grill.

Company CEO James Sinclair was inspired by the family-friendly sports bars in the US and after noticing a gap in the Australian market he established his first venue in Geelong in 2010.

“The brand is a new take on a sports bar,” he says. “A lot of people in Australia think of a sports bar as the corner of a pub with horseracing on. Our goal is to be Australia’s most loved sports bar & grill using state-of-the-art technology and a clean fit-out to create a welcoming social dining environment.”

In the last six years the company has expanded its reach across Victoria and Western Australia, and has no plans to slow down.

“It’s vastly exceeded our expectations,” Sinclair says, describing the brand’s reception interstate.

“We want to continue our expansion in Western Australia, we are also looking to open our first venue in Queensland in the next 12 months and we are continuing our growth in Victoria.”

To support this growth, The Sporting Globe seeks first to find the perfect partners to join its team.

“It’s a unique candidate we are looking for,” Sinclair says. “They need to have great people skills and as it is a larger setup than a smaller franchise, the investment is typically more like $800,000 to $1.5 million.”
The perfect partner is someone who can not only build great relationships with customers and clients, but who also has ability to invest in and manage a larger franchise, and has the people skills to lead a large team of 30 to 50 people.

“If you can be a positive and likable person in the community, I think that is a big advantage to having your own sports bar,” Sinclair says.
Incoming bar owners will be given a lot of support. The Sporting Globe offers an intensive six-week training course prior to opening and will then be supported side-by-side for the opening weeks of operation while the training wheels come off.

The support doesn’t stop there as the business runs as a turn-key operation.

“We work with franchise partners and teach them along the way, then we provide regular visitations with support for both front and back of house,” Sinclair says. “Some franchises you pay a license fee just to use the name, whereas ours is a far more hands-on approach where we view our franchisees as true partners.”

More than 1.4 million customers a year enjoy the combination of good food, beer and televised sport, and a booming online presence has attracted 65,000 followers on social media.
“Sport is a huge part of our culture and it’s our most consumed entertainment, so it makes sense that our venues specialising in sport are a success,” Sinclair says.
